Apple pie with lattice

Ingredients for 4 servings:

  • 350 g flour
  • 1 tsp baking powder
  • 100 g sugar
  • 1 packet of vanilla sugar
  • 2 eggs
  • 175 g margarine
  • 1 ½ kg apples, e.g. Elstar
  • 60 g butter
  • 100 g sugar
  • 1 packet of vanilla sugar
  • 1 dash of lemon juice
  • 1 pinch(s) cinnamon powder
  • 100 g almonds, slivered or sliced, if required
  • some cream

Instructions

Working time approx. 45 minutes; Rest time approx. 1 hour; Cooking/baking time approx. 1 hour; Total time approx. 2 hours 45 minutes

First, knead a shortcrust pastry from flour, baking powder, sugar, eggs, and margarine. Line a greased springform pan with 2/3 of the dough and raise the sides. Bake for 15 minutes in a preheated oven at 175°C. In the meantime, peel and core the apples and cut them into bite-sized pieces. Melt the butter in a saucepan. Add the apples and sauté for about 10 minutes. Add the remaining ingredients. If you like, you can fold in the almonds at this point. I usually skip this, as there are always some allergy sufferers at family gatherings. Spread the mixture on the base. Roll out the remaining dough and cut into strips. Carefully remove the strips and arrange them on top of the cake as a lattice. Brush the lattice with cream and bake for another 45 minutes. Let cool completely!
