Apple-quark-mascarpone cake

Ingredients for 1 servings:

  • 3 m.-sized apples
  • some butter or margarine
  • 250 g mascarpone
  • 250 g cream cheese
  • 1 pack of pudding powder (vanilla pudding powder, no cooking)
  • 250 ml milk
  • 100 g almond flakes
  • 4 eggs
  • 150 g sugar
  • 100 g flour
  • 1 tsp baking powder

Instructions

Working time approx. 45 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 1 hour 15 minutes

with sponge cake base

Beat the eggs and sugar for 7 minutes until frothy. Mix the flour with a teaspoon of baking powder, sift it over the cake, and stir briefly. Pour the batter into a greased 26 cm springform pan. Bake the base at 150°C for 30 minutes (test with a toothpick). Beat the quark and mascarpone until creamy, then mix the vanilla pudding with the milk and fold it into the quark and mascarpone mixture. Peel the apples and cut them into wedges. Roast them in a pan with a little butter/margarine until golden brown, adding almonds if desired. Let the apples cool. After 30 minutes, remove the base from the oven and let it cool on a wire rack. Scoop out the filling with a teaspoon, leaving a border of about 0.5 – 1 cm. Pour the cream into the center, arrange the apple slices on top, then scatter the sponge crumbs on top.
