Apple red cabbage

Ingredients for 4 servings:

  • 1 jar red cabbage, ready to cook
  • 1 m.-sized apple, sour
  • 1 m.-sized onion(s)
  • 1 tbsp goose fat
  • 1 bay leaf
  • 6 cloves
  • 2 tsp, heaped sugar
  • 1 tsp, leveled salt
  • 1 tsp vinegar essence
  • 250 ml water
  • 100 ml pineapple juice, possibly from the can

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Peel the onion, halve it, and cut it into thin strips. Quarter the apple, peel it, and remove the core. Set one quarter aside and dice the remaining quarters finely. Place the bay leaf on the whole apple quarter and stud it with the cloves. Heat the goose fat in a saucepan and fry the onion strips until golden brown. Now add the diced apple and simmer for about 5 minutes. Add the jar of red cabbage with its juice to the saucepan and fill with water. Add the remaining spices and stir everything well. Add the piece of apple with the bay leaf and cloves and remove after about 30 minutes. Now add the pineapple juice and simmer everything for about another 30 minutes. The pineapple juice gives the red cabbage a beautiful bluish color. It goes well with all braised and game dishes.
