Apple – Rum – Raisin Cookies

Ingredients for 4 servings:

  • 1 cup(s) raisins
  • 1 apple
  • 15 ml rum
  • 2 tsp lemon juice
  • 2 cup(s) flour (well heaped)
  • 1 cup(s) oatmeal (well heaped)
  • 1 tsp baking powder
  • 1 tsp cinnamon
  • 250 g butter or margarin
  • 1 cup(s) cane sugar
  • 1 egg(s)
  • 1 packet of vanilla sugar

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Dice the apple. Mix the raisins, apple pieces, rum, and lemon juice together and let stand for 15 minutes. Combine the flour, oats, baking powder, and cinnamon in a bowl. In another bowl, beat the butter and brown sugar for about 2 minutes until creamy. Add the egg and vanilla sugar and mix well again. First, stir in half the flour mixture, then the apple-raisin-rum mixture, and then the remaining flour mixture. Drop the dough with a teaspoon onto a baking sheet lined with parchment paper and bake at 160 degrees Celsius for about 15-20 minutes. I usually use 2 teaspoons of dough for one cookie.
