Apple semolina casserole

Ingredients for 4 servings:

  • 125 g sugar
  • 2 packets of vanilla sugar
  • 175 g butter
  • 4 eggs
  • 200 g wheat flour (type 405)
  • 200 g soft wheat semolina
  • 1 packet of baking powder
  • 1 pinch of cinnamon
  • 100 g hazelnuts, ground
  • 200 ml milk
  • 700 g apples, peeled, pitted, cut into wedges
  • 60 g raisins
  • 50 g almonds, chopped
  • 400 ml apple juice
  • 40 ml lemon juice

Instructions

Working time approx. 30 minutes; Cooking/baking time approx. 45 minutes; Total time approx. 1 hour 15 minutes

Beat the sugar, vanilla sugar, and softened butter until fluffy. Gradually beat in the eggs. Combine the semolina, flour, baking powder, cinnamon, and hazelnuts and stir in with the milk. Fold in the raisins. Spread the batter onto a baking sheet lined with baking paper or into a greased casserole dish and top with the apple slices. Sprinkle with the chopped almonds. Bake in a preheated oven at 150°C (fan oven) for 45 minutes. Combine the apple and lemon juice and pour evenly over the still-hot casserole.
