Apple snow mousse cake

Ingredients for 1 servings:

  • 125 g flour
  • 2 pinches of salt
  • 3 eggs
  • 300 ml apple juice
  • 100 g butter
  • 1 packet of baking powder
  • 3 packets of vanilla sugar
  • 50 ml milk
  • 1 tbsp almond flakes
  • 600 g apples
  • 1 packet of pudding powder (vanilla flavor)
  • 500 g cream
  • 2 packs of cream stiffener
  • Powdered sugar for sprinkling

Instructions

Working time approx. 30 minutes; Rest time approx. 4 hours; Cooking/baking time approx. 30 minutes; Total time approx. 5 hours

Preheat the oven to 175°C (fan assisted). First, separate the eggs. Beat the egg whites with a pinch of salt until stiff peaks form. Then, add 100g of sugar and beat until dissolved. Using a hand mixer, mix the butter with a pinch of salt and a sachet of vanilla sugar. Gradually add the egg yolks. Stir in the flour, baking powder, and milk alternately. Pour the batter into a 26cm baking pan and pour the egg whites over it, leaving some space around the edges. Sprinkle 1-2 tablespoons of flaked almonds over the top. Bake for 30 minutes. Let cool and then slice crosswise once. In the meantime, peel and chop the apples. Bring to a boil with 200ml apple juice and 100g sugar, then simmer on the stove with the lid on for 5 minutes over low heat. You don’t want the apple pieces to become too soft. Mix the custard powder with 100 ml of apple juice and stir it into the apples. Simmer for 1 minute and let it cool slightly. Place a cake ring around the base. Pour the apple mixture onto the bottom layer and chill slightly. Whip the cream with 2 packets of vanilla sugar and the cream stiffener and pour it onto the apples. Cover the cream with the second layer. Refrigerate for a few hours and sprinkle with powdered sugar.
