Apple spelt cake

Ingredients for 1 servings:

  • 800 g apples (Elstar), peeled and weighed
  • 500 g wholemeal spelt flour
  • 2 ½ tsp baking powder
  • 100 g brown sugar
  • 2 eggs
  • 200 g butter or margarine, soft
  • 150 g quark
  • 1 handful of almonds, chopped
  • 1 handful of nuts, ground
  • 1 handful of raisins
  • 50 ml water, warm
  • 1 lemon(s), juice
  • 30 g brown sugar
  • 1 packet of vanilla sugar
  • 3 tsp cinnamon

Instructions

Working time approx. 30 minutes; Cooking/baking time approx. 50 minutes; Total time approx. 1 hour 20 minutes

Mix the flour, baking powder, almonds, and sugar. One after the other, add the eggs, softened butter, and quark. Using a whisk, mix until smooth. Grease a springform pan and line it with baking paper. Roll out 2/3 of the dough and place it in the springform pan. It’s important that you form a high rim; it should reach all the way to the top. Set the remaining dough aside for now. Wash, peel, core, and slice the apples. Mix 600g of the apples with the ground nuts, raisins, lemon juice, vanilla sugar, cinnamon, and sugar. Pour the mixture onto the base. You can create your own topping with the remaining dough. Place the pan on the oven rack and bake in a preheated oven at 180°C for 50 minutes.
