Ingredients for 1 servings:
- 200 g flour
- 2 egg yolks
- 100 g sugar
- 150 ml yogurt
- 50 g peanut butter
- ½ tsp baking powder
- 1 kg apples (Elstar)
- 1 lemon(s), the juice
- 4 egg whites
- 1 dashes lemon juice
- 150 g sugar
- 1 tbsp vanilla sugar
- 4 tbsp hazelnuts, ground
Instructions
Working time approx. 35 minutes; Total time approx. 35 minutes
Beat the egg yolks with sugar until frothy. Stir in the yogurt and peanut butter. Combine the flour and baking powder, sift them in, and mix with the egg mixture. Roll out the dough and line a tart tin with it. Peel, core, and slice the apples. Drizzle with lemon juice. Cover the tart with apple slices and bake in a preheated oven at 180 degrees Celsius for about 30 minutes. Beat the egg whites with lemon juice until stiff peaks form. Add the sugar and vanilla sugar and continue beating until a thick batter forms. Remove the tart from the oven, sprinkle with 3 tablespoons of hazelnuts, and layer the meringue on top. Bake for another 15 minutes. Tip: If the oven door is left slightly ajar, the meringue will be extra crispy. Remove the tart and sprinkle with 1 tablespoon of hazelnuts.
