Ingredients for 1 servings:
- 2 ½ kg apples
- 3 stalks of thyme
- 500 g gelling sugar

Slice the apples into wedges and add them to a saucepan with 250 ml of water. Bring to a boil and simmer for about 30 minutes. Line a large sieve with cheesecloth. Pour the apples into the sieve and let them drain overnight. Collect the juice and measure out 900 ml of juice. Pluck the thyme leaves from the stems. Combine the juice and preserving sugar and bring to a boil. Add the thyme and simmer for 4 minutes, stirring continuously. Pour the jelly into prepared jars and seal immediately.
