Apple Tiramisu Cake

Ingredients for 1 servings:

  • 250 g butter
  • 275 g sugar
  • 4 eggs
  • 325 g flour
  • 1 packet of baking powder
  • 3 tbsp milk
  • 750 g apples
  • 400 ml apple juice
  • 1 packet of pudding powder (vanilla)
  • 5 sheets of gelatin
  • 500 g mascarpone
  • 500 g natural yogurt
  • 7 tbsp Amaretto
  • 1 vanilla sugar
  • 250 g whipped cream
  • n. B. Biscuit(s) (Amarettini) for decorating
  • Cocoa powder for decoration
  • some water

Instructions

Working time approx. 45 minutes; Rest time approx. 4 hours; Total time approx. 4 hours 45 minutes

Cream the butter and 150g sugar. Beat in the eggs one at a time. Mix the flour and baking powder, add alternately with the milk and beat in. Pour the batter into a greased 26cm springform pan and smooth it out. Bake in a preheated oven at 200C for approx. 25 minutes. Allow to cool. Peel, core and slice the apples. Bring the apple juice to a boil, cover and sauté the apple pieces in it for approx. 1 minute until smooth. Mix the custard powder and 25g sugar with a little water until smooth. Use this to thicken the compote. Then allow to cool. Soften the gelatine. Beat the mascarpone with 100g sugar, natural yogurt, Amaretto and vanilla sugar until smooth. Chill 1/3 of the mascarpone cream. Squeeze out the gelatine, dissolve it and mix it with 3 tablespoons of the remaining mascarpone cream. Then stir into the remaining cream. Whip the cream until stiff and fold into the gelling cream. Halve the cake layer horizontally. Place a cake ring around the bottom layer. Spread some of the cream on the layer and spread some of the compote on top. Repeat and finish with the cream. Place the second cake layer on top and chill the cake for about 4 hours. Carefully remove the cake from the cake ring. Stir the chilled mascarpone cream thoroughly and spread it all over the cake. Decorate the cake with the amaretti biscuits and dust with cocoa powder.
