Irish Coffee Muffins

Ingredients for 1 servings:

  • 250 g flour
  • 1 tsp baking soda
  • 150 g brown sugar
  • 120 ml oil, neutral or butter flavored
  • 2 tbsp instant coffee powder, heaped tbsp
  • 2 egg yolks
  • 200 ml cream
  • 80 g walnuts, chopped
  • 1 tsp, smothered cinnamon
  • 1 packet of vanilla sugar (bourbon vanilla sugar)
  • 40 ml whiskey
  • 2 pinches of salt
  • possibly grease for the mold

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Gently heat the cream and stir in the instant coffee until dissolved. Add the whiskey and mix well. Place paper baking cups in the muffin tin or grease it well. Preheat oven to 180°C (center oven, fan oven 160°C). Combine the flour, baking powder, and cinnamon. Beat the egg yolks, sugar, oil, and salt in a large bowl until frothy. Sift the flour and cinnamon mixture into the egg yolk mixture in 4 batches, mixing well each time. Stir in the coffee cream and chopped walnuts. Pour the batter into the muffin tin. Bake in the preheated oven for approximately 20-25 minutes. Let rest in the tin for 5 minutes, then remove from the tin and let cool on a wire rack.
