Ingredients for 4 servings:

  • 2 small apples
  • 250 g mascarpone
  • 125 ml cream
  • 1 pack of pudding powder, vanilla
  • 375 ml apple juice
  • 2 packets of vanilla sugar
  • some lemon juice
  • n. B. Sweetener, liquid

Instructions

Working time approx. 20 minutes; Rest time approx. 2 hours; Cooking/baking time approx. 5 minutes; Total time approx. 2 hours 25 minutes

Peel, core, and cut the apples into small pieces. Drizzle with a little lemon juice. Make a pudding with the apple juice, pudding mix, and 1 tablespoon of vanilla sugar. Fold in the apple pieces, adding sweetener if desired. Let cool, stirring occasionally. Then divide between small bowls. Whisk the mascarpone with the cream, a little lemon juice, and 1 tablespoon of vanilla sugar until creamy and spread over the apples. Garnish as desired. Chill.
