Apple yeast rolls

Ingredients for 1 servings:

  • 200 g milk
  • 15 g sugar
  • ½ pack of vanilla pudding powder (20 g)
  • 500 g flour
  • 1 cube of yeast
  • 200 g milk, room temperature
  • 80 g sugar
  • 70 g butter
  • 1 egg(s)
  • ½ tsp salt
  • 80 Sour cream or crème fraîche
  • 1 apple, preferably Cox Orange
  • Powdered sugar, for dusting

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

For the Thermomix TM31. Low in calories. Makes 15 pastries.

For the cream, place everything in the mixing bowl and mix for 6.5 minutes/90°C/speed 2. Then transfer to a different container and cover the surface of the cream with cling film. For the dough, place everything in the mixing bowl and knead for 2 minutes/speed 2. Transfer to a bowl and let it rise in a warm place for 30 minutes. In the meantime, peel and core the apple and cut it into small pieces. Stir 70g of sour cream into the cream. Roll out the yeast dough into a rectangle (30 x 40cm). Spread the cream thickly over it, leaving a wide edge. Place the apple pieces on the cream. Spread the edge with 10g of sour cream. Fold the wide side of the dough inwards. Roll up from the longer side. Using a large serrated knife, cut the roll into 2-3cm thick snails; this will yield approx. 15 snails. Place the snails on two baking sheets lined with baking paper and let them rise for another 20 minutes. Bake in a preheated oven at 175°C (convection oven) for approximately 15 minutes. Dust with powdered sugar while still warm. Note: This is my own recipe. One snail contains 220 kcal, 6 g protein, 5.5 g fat, and 33 g carbohydrates.
