Applesauce jam with a twist

Ingredients for 4 servings:

  • 1 kg apples, peeled and pitted weighed
  • 350 ml cider
  • 1 packet of gelling sugar (2:1)
  • 2 tsp sambal oelek or 1 tsp chili powder

Instructions

Working time approx. 30 minutes; Cooking/baking time approx. 6 minutes; Total time approx. 36 minutes

Dice the apples and add them to a saucepan with the cider. Simmer the apple pieces over medium heat until soft. Then puree with a hand blender. Stir in the sambal oelek or chili and let it steep until the applesauce is cold. Pass the cooled puree through a fine sieve. Transfer the applesauce to a large saucepan, stir in the gelling sugar, and cook over high heat for 6 minutes while stirring continuously. Test the setting on a plate. When the desired consistency is reached, pour the jam into jars. If the jam does not set when tested, simmer for another 3-4 minutes, stirring frequently.
