Applesauce muffins

Ingredients for 12 servings:

  • 250 g flour
  • 250 g applesauce (from Natreen or Schneekoppe)
  • 100 g sugar
  • 80 g butter (semi-skimmed butter)
  • 2 tsp baking powder
  • 1 tsp cinnamon
  • 2 eggs
  • 125 ml milk, 0.3% fat
  • clove(s), ground

Instructions

Working time approx. 10 minutes; Total time approx. 10 minutes

Preheat oven to 180°C. In a bowl, combine flour, baking powder, sugar, cinnamon, and clove powder. In another bowl, whisk together eggs, lemon juice, applesauce, milk, and butter until fluffy, then fold in the flour mixture. Pour batter into a 12-hole muffin tin lined with baking cups. Mix 2 tablespoons of sugar with 1/2 teaspoon of cinnamon. Sprinkle over the muffins and bake for about 20-25 minutes. Let the muffins cool for 5 minutes, then remove from the tin and let them cool on a wire rack.
