Applesauce – Oatmeal – Muffins

Ingredients for 1 servings:

  • 125 ml milk
  • 90 g oat flakes, fine
  • 190 g spelt flour
  • 1 tsp cinnamon powder
  • ¼ tsp nutmeg
  • 7 g baking powder
  • 1 egg(s)
  • 140 g sugar
  • 250 g applesauce
  • 80 ml oil
  • jam
  • Cake icing (chocolate icing)
  • 2 tbsp butter
  • 4 tbsp oat flakes, heaped
  • 2 tbsp sugar

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

Place the oats in a bowl, mix with the milk, and let stand for 5 minutes. Preheat the oven to 160°C (325°F). Combine the flour, baking powder, and spices. In another bowl, whisk the egg and mix well with the sugar, oil, soaked oats, and applesauce. Finally, stir in the flour mixture until well moistened. Fill the batter into the prepared muffin cups and bake for 20-25 minutes. Spread the cooled muffins with a little jam, sprinkle with oat brittle, and drizzle with chocolate glaze. For the brittle, heat the butter, stir in the oats and sugar, and stir until browned. Transfer the mixture to a baking sheet, break it up with a fork, and let it cool.
