Applesauce with allspice

Ingredients for 1 servings:

  • 2 kg apples
  • 600 ml apple cider
  • 600 ml apple juice
  • 500 g cane sugar
  • 1 tsp ground cinnamon
  • ½ tsp allspice, ground
  • 1 tsp clove(s), ground

Instructions

Working time approx. 1 hour; Total time approx. 1 hour

Peel, core, and roughly chop the apples. Combine the cider and apple juice in a saucepan and reduce by half. Add the apples and simmer for 40 minutes until a purée is obtained. Strain the apple mixture through a sieve. Mix with the sugar and spices and return to the saucepan. Simmer for 45 minutes, stirring continuously. Pour the purée into warmed jars and seal immediately. This applesauce can be cooked with or without allspice, and used as sweet or spicy apple jam. As a spiced apple jam, it is also delicious with boiled beef, roast pork, black pudding, liver sausage, or goose or duck.
