Ingredients for 4 servings:

  • 4 pork schnitzels
  • 4 slices of cooked ham
  • 100g Gorgonzola
  • 200 ml cream
  • 2 tbsp tomato paste
  • 500 ml vegetable stock
  • some paprika powder
  • some salt and pepper
  • some oregano
  • some basil
  • 1 shot of white wine

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 45 minutes

with ham and Gorgonzola filling in tomato cream sauce

Flatten the schnitzels and season with salt, pepper, and paprika. Cut the Gorgonzola into strips. Place a slice of ham and 1-2 strips of Gorgonzola on each schnitzel, and roll up the schnitzel. Secure the roulades with toothpicks or roulade pins. Heat a little oil in a pan and sear the roulades until crispy. Remove the roulades from the pan and set aside. Add the tomato paste to the pan and sear, deglaze with the white wine and stock, and reduce slightly. Chop the oregano and basil, add to the sauce, and refine the sauce with the cream. Thicken with a little cornstarch, if desired. Place the pork roulades in the sauce, cover, and simmer gently for 20-25 minutes. We like to serve this with rice or pasta.
