Ingredients for 4 servings:

  • 200 g butter or margarine
  • 200 g sugar
  • 4 eggs
  • 200 g flour
  • 1 kg apricot(s), fresh or from the can
  • 25 g butter
  • 100 g sugar
  • 1 pinch(s) cinnamon powder
  • 1 pinch of ginger powder
  • 1 pinch(s) coriander powder
  • 1 pinch of nutmeg
  • 2 bay leaves

Instructions

Working time approx. 40 minutes; Cooking/baking time approx. 1 hour; Total time approx. 1 hour 40 minutes

Oriental

Beat the butter, sugar, and eggs in a bowl with a hand mixer until fluffy. Combine the flour and baking powder and stir into the mixture. Wash, pit, and halve the apricots. Sauté the apricots with the butter, sugar, and spices in a saucepan for 15-20 minutes. Pour half of the batter into the springform pan, arrange the apricots on top, and pour the remaining batter over the top. Bake at 165 degrees Celsius (325 degrees Fahrenheit) for 35-40 minutes. Serve lukewarm with cream or sprinkle with powdered sugar.
