Apricot Chicken

Ingredients for 4 servings:

  • 200 g apricot(s), dried
  • 400 g chicken breast fillet(s)
  • 4 small onions
  • 2 tbsp butter
  • 1 can of tomatoes, chopped
  • 125 g cream
  • curry powder
  • Paprika powder, sweet
  • salt and pepper

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Pour boiling water over the apricots and let them steep for a while. Preheat the oven to 180°C. Wash the meat, pat dry, and cut into 3-4 cm pieces. Season generously with paprika, salt, and pepper. Peel and quarter the onions, fry them in a pan with butter, and roast for about 5 minutes until light brown. Add the meat and sear on all sides. Deglaze with tomatoes and cream, simmer briefly, and season with salt, pepper, paprika, and curry powder. Transfer everything to a baking dish. Cut the drained apricots into strips and arrange them between the meat. Bake the dish in the oven for about 35 minutes. Tip: This also works with fresh apricots. In this case, you would need about 400 g. It also tastes good with mango!
