Apricot dumplings

Ingredients for 4 servings:

  • 500 g apricot(s)
  • 30 g almond(s), sweet, grated
  • 40 g sugar
  • 125 g breadcrumbs
  • 60 g butter, melted
  • 2 eggs
  • e.g. milk

Instructions

Working time approx. 40 minutes; Total time approx. 40 minutes

Apricot dumplings. Sweet dumplings; also goes well with roast beef

Peel the apricots, halve them, and dice them finely. Mix them with ground sweet almonds, sugar, breadcrumbs, melted butter, eggs, and enough milk to form a thick batter. Let them stand for 5-10 minutes. Using a spoon dipped in boiling water, scoop out dumplings and cook them in lightly salted, boiling water until tender. If the first dumpling doesn’t work, improve the consistency of the batter by adding milk or breadcrumbs. Serve in a bowl and sprinkle with butter-toasted breadcrumbs. Serve as a sweet starter or main course with wine or fruit sauce, or as a side dish to roast beef.
