Apricot-mango jam with ginger

Ingredients for 1 servings:

  • 600 g apricot(s), pitted
  • 400 g mango(s), peeled and sliced
  • 1 piece(s) of ginger, hazelnut-sized, no more!
  • 500 g gelling sugar 2:1

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

Wash, pit, and slice the apricots. Peel the mango, remove the stone, and slice. Peel and finely dice the ginger. Place everything in a large pot and puree with a hand blender. Add the gelling sugar. Bring to a boil over high heat, stirring constantly. Boil gently for 3 minutes. Pour the hot jam into jars and seal immediately. Variation: You can also use peaches or nectarines instead of apricots.
