Instructions
Working time approx. 30 minutes; Rest time approx. 1 hour 15 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 2 hours
for about 40 Greek cinnamon-sesame cookies with wine
In a large bowl, mix all ingredients except the flour with a whisk. Then gradually add enough flour and knead by hand until you have a smooth, easily pliable, and non-sticky dough. The amount of flour can vary between 540 and 570 g, depending on the quality. Wrap the dough in plastic wrap and chill for one hour. Flour or oil your work surface, roll out the dough to a thickness of about 3 mm, and cut out cookies in your favorite shapes. My tip: You can also braid the dough into small braids. This amount is enough for about 40 cookies or 30 braids. Place the cookies or braids, not too close together, on a baking sheet lined with baking paper and let rest for 15 minutes. Then bake in a preheated oven at 180 degrees Celsius (convection oven) on the middle rack for about 13-15 minutes. Always keep an eye on it, as every oven is different. Trust your nose; it should smell pleasant and not “bake.” Once the cookies have cooled, decorate with chocolate coating and Smarties as desired, or simply dip them plain into coffee. Tip: If you’re allergic to sesame or don’t have any, you can also use almonds, walnuts, or other nuts. Archo, my sister, kindly shared this recipe with me. It’s a hit at every coffee party!
