Grapefruit, avocado and goat cheese salad

Ingredients for 1 servings:

  • 150 g lamb’s lettuce
  • 150 g arugula
  • 2 grapefruits
  • 3 firm avocados
  • 1 roll(s) of soft goat cheese
  • 2 small onions, red
  • 100 ml olive oil
  • 40 ml balsamic vinegar
  • 3 tbsp mustard, hot
  • 3 tbsp honey
  • 2 tbsp lemon or lime juice
  • salt and pepper

Wash the lettuce and separate the lamb’s lettuce rosettes into individual leaves. Fillet the grapefruit and cut into smaller pieces, reserving as much juice as possible. Peel, pit, and dice the avocados. Finely slice the onions. Dice the soft goat cheese (up to 1.5 rolls, if desired). Mix everything together. For the dressing, combine the grapefruit juice, a few tablespoons of honey, and mustard in a jam jar. Fill to just over half full with olive oil and a little balsamic vinegar, then shake the sealed jar to combine. Season to taste with lime or lemon juice, salt, and pepper. Drizzle the dressing over the salad just before serving.
