Ingredients for 3 servings:

  • 1 onion(s)
  • 2 cloves garlic
  • ½ pepper
  • 50 g spring onions
  • 30 g dried tomatoes
  • ½ can tomatoes, chopped
  • 1 tsp sugar
  • 1 tbsp oregano
  • 10 g Parmesan, freshly grated
  • 1 tbsp olive oil
  • salt and pepper

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 30 minutes

Finely dice the onion and garlic. Halve the bell peppers lengthwise and remove the spicy white seeds and skins. Cut the bell peppers crosswise into fine strips. Clean the spring onions and slice them thinly. Drain the sun-dried tomatoes well and chop them finely. Heat olive oil in a non-stick pan and sauté the prepared vegetables until lightly browned. Add half a can of tomatoes with their juices to the pan. Season with pepper, salt, sugar, and oregano and simmer for a few minutes. Stir in the grated Parmesan cheese. This goes very well with macaroni or penne.
