Arugula – Melon – Salad

Ingredients for 6 servings:

  • 350 g arugula
  • 1 ½ honeydew melon(s)
  • 4 ½ tbsp Balsamic vinegar, white
  • 3 tbsp olive oil
  • 3 tbsp syrup (mango syrup)
  • 1 ½ tsp lemon juice
  • 4 shallots
  • salt and pepper

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

Wash the arugula and spin dry. Halve the whole melon and remove the cores from all three halves. Scoop out the insides with a melon baller or a teaspoon to form balls about 1 cm in diameter. Finely dice the shallots. Mix the marinade together with vinegar, olive oil, mango syrup, lemon juice, salt, and pepper. Toss the melon balls and shallots in the marinade and let stand for 10 minutes. Stir in the arugula just before serving.
