Arugula salad with macadamia nuts

Ingredients for 4 servings:

  • 125 g arugula
  • 2 peppers
  • 2 spring onions
  • 50 g cherry tomatoes
  • 1 small orange(s)
  • 125 g macadamia nuts, roasted and salted
  • 200 g mozzarella, grated
  • 50 ml olive oil
  • 1 pinch of salt

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 5 minutes; Total time approx. 25 minutes

Add the olive oil and spring onions to a hot pan. Dice the bell peppers and sauté them with the onions. Wash the arugula and place them in a large bowl. Dice the cherry tomatoes and add them to the bowl along with the sautéed onions and bell peppers. Carefully chop the nuts into smaller pieces and add them to the salad along with the grated cheese. Mix the juice of one orange with the remaining olive oil, add it, and toss the salad. Season with salt, if desired. Optionally, toast bread, cut it into cubes, and add it to the salad.
