Arugula salad with Parmesan and pine nuts

Ingredients for 4 servings:

  • 500 g arugula
  • 100 g tomatoes
  • 1 onion(s), red
  • 100 g Parmesan, shaved
  • 50 g pine nuts
  • 3 tbsp balsamic vinegar
  • 4 tbsp oil
  • Salt and pepper from the mill
  • 1 pinch of mustard, medium hot
  • 1 clove(s) garlic

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

Wash the arugula salad and shake dry. Blanch the tomatoes, peel them, and remove the stems and seeds. Dice the flesh. Peel the garlic and chop it into tiny cubes or press it through a press. Roast the pine nuts in a dry pan. Mix the vinegar, oil, mustard, and garlic together to make a dressing. Season with salt and pepper. Place the arugula salad, tomatoes, and pine nuts in a bowl, add the dressing, and mix well. Sprinkle with Parmesan cheese just before serving.
