Arugula salad with pine nuts and Parmesan

Ingredients for 3 servings:

  • 500 g arugula
  • 2 tbsp Balsamic vinegar, (dark)
  • 2 tbsp olive oil or rapeseed oil
  • salt and pepper
  • 50 g pine nuts
  • 50 g Parmesan cheese (in one piece)

Instructions

Working time approx. 10 minutes; Total time approx. 10 minutes

First, wash and dry the arugula. Combine the vinegar, oil, salt, and pepper, then lightly toast the pine nuts in a dry pan. Carefully toss the arugula with the vinegar and oil mixture and arrange on three plates. Finally, sprinkle the pine nuts and freshly shaved Parmesan cheese over the top.
