Arugula salad with tomatoes, mozzarella and seeds

Ingredients for 2 servings:

  • 75 g arugula
  • 125g mozzarella
  • 280 g tomatoes
  • 2 tbsp balsamic vinegar
  • 1 tsp mustard, medium hot
  • ½ tsp honey
  • 2 tbsp olive oil, good
  • salt and pepper
  • 20 g mixed seeds, e.g. pumpkin, sunflower or pine seeds

Working time approx. 15 minutes; Total time approx. 15 minutes

Wash the arugula and tear it into small pieces if necessary. Wash the tomatoes and cut them into bite-sized pieces. Dice the mozzarella. Combine everything in a bowl. For the dressing, combine the balsamic vinegar, mustard, honey, and olive oil in a small bowl and season with freshly ground salt and pepper. Roast the seeds in a dry pan until fragrant and lightly browned. Pour the dressing over the salad and toss to serve, tossing the seeds over the salad.
