Rice flour pancakes

Ingredients for 2 servings:

  • 100 g rice flour
  • 150 ml long-life milk
  • 100 ml carbonated mineral water
  • 2 m.-sized eggs
  • 2 tsp baking powder
  • 1 tsp sugar or salt
  • 4 tsp margarine or oil, for frying

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 25 minutes

In a deep bowl, whisk the milk and eggs with a hand mixer. While whisking, gradually add the baking powder and flour. Now add the mineral water. If you prefer savory pancakes, add salt. Otherwise, add sugar or vanilla sugar. Melt 1 teaspoon of vegetable margarine in a 24cm skillet. Place over medium heat and cook the pancakes one at a time. Important: Always stir the batter thoroughly just before adding it to the pan, as the rice flour will settle slightly. Tastes delicious with jam.
