Arugula with Halloumi

Ingredients for 4 servings:

  • 200 g arugula
  • 200 g cheese (halloumi)
  • 50 g walnuts
  • 8 tbsp balsamic vinegar
  • some olive oil
  • some lemon juice

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

Cut the halloumi into coarse slices and fry briefly on both sides in a pan over medium heat with olive oil until the halloumi is browned. Then drizzle the halloumi with the lemon juice. Place the walnuts in a plastic bag and hit the bag with a rolling pin or similar tool to roughly crush the walnuts. Arrange the halloumi and arugula on plates. Scatter the walnuts over the arugula. Then drizzle each arugula with 2 tablespoons of balsamic vinegar (2 tablespoons per serving). This recipe also works well with air-dried ham or tomatoes (preferably sun-dried tomatoes marinated in oil with garlic).
