Ingredients for 2 servings:
- 1 onion(s)
- 1 stalk(s) leek
- 2 carrots
- 1 small zucchini
- 1 handful of peas
- 1 piece(s) ginger (small piece)
- 1 piece(s) celery (small piece)
- 1 small bunch of parsley
- 2 eggs, fried
- 2 chicken breasts
- some oil
- 1 pack of Chinese egg noodles (Mie noodles)
- some soy sauce
- Spice mix (Asian spices – turmeric, paprika, cayenne pepper, caraway, star anise, …)
- salt and pepper
Instructions
Working time approx. 15 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 30 minutes
Mie egg noodles with chicken, carrots, peas
Dice the onions, slice the leek into rings, and sauté in oil. Wash, trim, and slice the carrots and zucchini diagonally. Finely chop a small piece of ginger and a small piece of celery and add them to the pan with the peas, carrots, zucchini, and chopped parsley. Briefly fry and add the finely chopped chicken. Add a few more drops of oil if desired. Brown the meat well and season with a little soy sauce (about 4 tablespoons) and the spices. Prepare the mie noodles according to the package instructions and mix them with the meat along with the fried eggs (mie noodles are very fine; it’s best to mix them into the dish with two spoons).
