Ingredients for 2 servings:
- 1 onion(s)
- 1 piece(s) ginger
- 2 tbsp sesame oil
- 2 jars of corn (sweet corn)
- ½ bunch of spring onions
- 2 chili peppers
- ½ can coconut milk
- ½ liter vegetable broth
- 2 tbsp curry powder
- 2 tbsp desiccated coconut
- 1 tbsp honey (dandelion blossoms) honey
- ½ tsp cinnamon
- 1 tsp coriander
- possibly salt
- possibly rice vinegar
- possibly fish sauce
Instructions
Working time approx. 20 minutes; Total time approx. 20 minutes
Dice the onion and ginger and sauté in sesame oil. Drain a jar of corn and add it to the onion and ginger mixture. Deglaze with stock and coconut milk and simmer slightly. Meanwhile, deseed and chop the chili pepper and slice the spring onion. Purée the mixture in a pot with an immersion blender until smooth and add the remaining corn, chili, spring onions, and spices. Optionally, season with salt, rice vinegar, and fish sauce. Serve with fresh (whole-grain) bread.
