  • 2 tbsp sherry or rice wine

Wash the meat, dry it, and cut it into thin slices. Crush the garlic cloves, mix it with sugar, soy sauce, and sherry or rice wine. Add the strips of meat and let it marinate for about 2 hours (longer is fine). Remove the meat from the sauce, drain well, and fry in hot oil in a pan for about 4 minutes, stirring constantly. Add the rest of the marinade, heat through, and serve. Serve with fragrant rice and stir-fried vegetables.
