Asian glass noodles with minced meat and herbs

Ingredients for 4 servings:

  • 250 g glass noodles
  • 2 tbsp sesame oil
  • 2 onions
  • 2 cloves garlic
  • 2 red chili peppers
  • 500 g minced beef
  • 4 tbsp oil (peanut oil)
  • 2 kaffir lime leaves
  • 2 limes, untreated
  • 50 ml soy sauce
  • 150 ml chili sauce, sweet and hot
  • ½ bunch mint
  • 1 bunch of coriander leaves
  • 100 g peanuts, roasted and salted
  • 1 bunch of spring onions

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

Prepare the glass noodles according to the package instructions. Then toss with the sesame oil and keep warm. Peel and finely dice the onions and garlic. Deseed and finely dice the chili peppers. Finely slice the kaffir lime leaves. Brown the minced beef in hot peanut oil in a wok, add the diced onions, garlic, and chili, and fry. Add the kaffir lime leaf strips and fry briefly, then deglaze with the soy sauce and remove from the heat. Wash the limes in hot water, dry them; zest one lime, squeeze the juice from both limes, and mix the juice with the chili sauce. Add the zest and mix the dressing with the glass noodles. Rinse the herbs, shake dry, and roughly chop. Roughly chop the peanuts. Trim the spring onions and slice them diagonally into fine rings. Fold everything into the minced beef and serve mixed with the glass noodles. Also tastes very good cold as a salad.
