Asian Soup – 3 Delicious Recipes

More and more people are interested in Asia and its specialties. Asian cuisine thrives on its interesting and exotic nature. In the following, we, therefore, present three delicious recipes for Asian soups.

Asian soup with vegetables and noodles

This Asian soup with vegetables and noodles is a very classic and simple dish. It is also a light and vegetarian soup. For 2 servings you need the:

  • Half a carrot, half a pepper, and 2 spring onions. First, peel the carrot and cut it into strips with the pepper. You can cut the spring onions into rings.
  • You will also need half a clove of garlic and a small piece of ginger. You need to chop the garlic and ginger into small pieces.
  • Now sauté all the vegetables in soybean oil with a teaspoon each of Chinese spices, sambal oelek, and peanut butter. You can adjust the spices however you like, depending on your preferences.
  • Then pour it with 0.75L vegetable broth and let it simmer for 10 minutes.
  • Meanwhile, prepare 50g bean sprouts and add them to the broth along with 50g soup noodles.
  • Let the whole thing simmer for about 5 minutes until it’s done cooking.

Asian chicken soup with vegetables

In addition to many vegetarian dishes, Asia also has some meat dishes to offer. That’s why we show you how to prepare an Asian chicken soup. Here, too, the quantities are based on 2 servings.

  • Wash 400g chicken fillet and pat dry. You also have to peel 1 onion, half a carrot, and 50g celeriac. Quarter the onion and cut the other two ingredients into small pieces.
  • You now have to wash and quarter 2 tomatoes. Put them in a saucepan with the meat, vegetables, peppercorns, 1 teaspoon salt, and 0.75L cold water, and let everything simmer for 20 minutes.
  • While cooking, half a Chinese cabbage, half a pepper, and half a bunch of spring onions can be cleaned, washed, and cut into small pieces. Also, wash 125g sprouts (mung bean sprouts) and drain.
  • Now take the boiled broth and pour it through a sieve. Catch the broth. You now have to pat the meat dry.
  • Heat 1 tablespoon of oil in a large saucepan and sauté the Chinese cabbage in it. The peppers and spring onions are also briefly steamed.
  • Then add the broth and let the soup cook covered for 10 minutes. You can then add the sprouts and cook for 1-2 minutes.
  • You can fry the chicken fillet in a coated pan with 1 tablespoon of hot oil. Turn this over regularly. After that, you can slice the meat and season it with salt and pepper.
  • Now you can season the soup with sambal oelek and soy sauce and serve it with fried chicken slices.

Exotic Pumpkin Soup

We also introduce you to a rather exotic soup dish with pumpkin. Here the quantities are again coordinated for 2 portions, which you can also extrapolate as you like.

  • First, you need to deseed one-third of the pumpkin (Hokkaido) and cut it into cubes. Put this in a pot with hot oil and a third teaspoon of red curry paste and mix it briefly with some flavored oil.
  • Now you need to add about 180-200ml vegetable broth and 2/3 lemongrass stalks. The squash should then simmer for around 15 minutes. You then have to remove the lemongrass again.
  • Meanwhile, peel a third of the mango and cut it into small cubes. Add this to the pot with a small amount of peeled and grated ginger and 80ml coconut milk.
  • Let everything cook for another 5 minutes and then puree it. Depending on the consistency, you can add a little more liquid and, if you need more spiciness, some curry paste.
  • Now the exotic soup is ready and can be served.
