Asian spaghetti salad

Ingredients for 4 servings:

  • 250g spaghetti
  • 1 bunch of spring onions
  • 200 g chicken breast fillet(s) or turkey breast fillet, cooked
  • 1 tsp spice mix (Chinese spice)
  • 2 tbsp soy sauce
  • 2 tbsp vinegar
  • 2 tbsp oil

Break the spaghetti in half three times and cook al dente according to the package instructions. Then rinse in cold water. Trim the spring onions and cut into small rolls. Dice the chicken breast or turkey breast fillet. Make a marinade with soy sauce, vinegar, and oil. Mix the spaghetti with the spring onions and meat cubes. Add the marinade and mix everything thoroughly. Let it marinate in the refrigerator for about 1-2 hours before serving. Season to taste before serving – add more Chinese spices if desired. Tip: You can buy ready-cooked turkey breast in the supermarket. If you prefer a crunchier salad, add a jar of drained bean sprouts.
