Ingredients for 1 servings:

  • 1 handful of green beans
  • 2 large carrots
  • ½ bell pepper(s)
  • 1 piece(s) galangal
  • 1 piece(s) ginger root
  • 1 chili pepper(s)
  • Soy sauce, dark
  • 1 spring onion(s)

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Finely chop a small piece of galangal and a good chunk of ginger. Deseed the chili pepper and slice it into fine strips. Sauté it in a little oil. Cut the beans, carrots, and bell pepper into bite-sized pieces. Add the beans to the wok, add the soy sauce, and cook with the lid closed for about 5 minutes. Then add the carrots and cook with the lid closed for about 5 minutes. Finally, add the bell pepper and cook with the lid closed for about 2 minutes. Garnish with spring onion. Serve with basmati rice.
