Asparagus and Strawberry Dessert

Ingredients for 4 servings:

  • 250 g asparagus, green
  • 1 tsp butter
  • ½ tsp lemon juice
  • 250 g strawberries, halved or quartered
  • 3 tbsp vinegar (white wine vinegar)
  • 1 tbsp olive oil, extra virgin!
  • salt and pepper
  • Sugar

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Peel the asparagus only at the bottom half, trimming any woody ends, then cut into 3 cm long pieces. Boil salted water with sugar, lemon juice, and butter. Add the asparagus and cook for about 10 minutes. For the salad dressing, combine the vinegar and oil, season to taste, and add salt and pepper if desired. Pour over the warm asparagus and let stand for about 15 minutes. Then add the halved strawberries, mix, and serve immediately.
