Asparagus crepes

Ingredients for 4 servings:

  • 16 stalk(s) asparagus
  • 150 g flour
  • 3 eggs
  • 4 slice(s) ham, cooked
  • 1 jar crème fraîche
  • 250 ml milk, lukewarm
  • 1 potato(s), grated
  • oil

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Cook the asparagus as usual. Mix the flour, eggs, milk, and grated potato into a batter. Cook four crepes from the batter in a hot pan with oil. Top each with a slice of ham and four spears of asparagus, then roll up the whole thing. Lightly brush the rolls with crème fraîche.
