Asparagus 'in a skirt'

Ingredients for 2 servings:

  • 8 stalk(s) asparagus
  • 4 slices of cooked ham
  • 2 eggs
  • Flour
  • Breadcrumbs
  • 1 tbsp salt
  • 1 pinch(s) of sugar
  • Water
  • Clarified butter or butter for frying

Instructions

Working time approx. 10 minutes; Total time approx. 10 minutes

Asparagus wrapped in cooked ham and breaded and fried

Clean the asparagus, peel if necessary, and trim to equal lengths. Boil for 5 minutes in water with salt and sugar, then remove from the water. Wrap two asparagus spears each in a slice of cooked ham and secure with a toothpick. Coat in flour, roll in beaten egg, and then bread. Fry in hot fat in a large pan on both sides until golden brown (ham). Serve hot. Serve with new potatoes. Enjoy! Tip: The best way to secure the ham is to pierce it sideways through the ham and asparagus. The liquid from the asparagus water can be used to make asparagus soup or drunk as a detox.
