Asparagus pasta

Ingredients for 4 servings:

  • 500 g pasta
  • 500 g asparagus
  • 200 g ham, cooked, chopped
  • 250 ml milk
  • 1 egg yolk
  • Flour
  • butter
  • Salt
  • 1 pinch(s) of sugar

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Peel and slice the asparagus. Boil the peels in the milk with a little salt and a pinch of sugar. Meanwhile, cook the pasta until al dente. Sauté the asparagus in butter with a pinch of salt and remove from the pan. Make a roux with the butter, add the peel juices, and bring to a boil briefly. Mix three tablespoons of the sauce with one egg yolk and stir this into the sauce. Do not allow it to boil. Season to taste. Mix the pasta with the sauce, asparagus, and ham and serve immediately.
