Ingredients for 4 servings:

  • 500 g asparagus, white, peeled, sliced
  • 2 eggs, hard boiled, egg whites finely chopped.
  • 4 tbsp mayonnaise
  • 200 ml sour cream
  • 1 tbsp lemon(s)
  • 2 tbsp mustard
  • 1 tbsp cognac
  • 1 dashes Worcestershire sauce
  • 1 bunch of chives, cut into rolls
  • Vinegar (wine vinegar)
  • Salt and pepper, from the mill
  • Sugar, to taste

Instructions

Working time approx. 20 minutes; Rest time approx. 1 hour; Total time approx. 1 hour 20 minutes

with raw white asparagus

Strain the egg yolks through a fine sieve. Mix well with the remaining dressing ingredients. Finely chop the egg whites and add them. Season with wine vinegar, salt, pepper, and sugar. Fold in the asparagus slices and let stand for a good hour.
