Asparagus salad with red wine vinaigrette

Ingredients for 4 servings:

  • 1 kg asparagus
  • 1 m.-sized onion(s)
  • salt and pepper
  • n. B. vinegar
  • n. B. Oil
  • 4 tbsp red wine, dry
  • 1 pinch(s) of sugar
  • Garlic, as desired

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 30 minutes

Peel the asparagus, cut it into 2cm pieces, and cook it in water with salt and sugar until slightly tender. Meanwhile, finely chop the onion and mix with the remaining ingredients to make a vinaigrette. Add the asparagus, still hot from the cooking water, to the salad dressing and let it marinate briefly. Serve with various types of ham and parsley-flavored potatoes.
