Asparagus with caper butter

Ingredients for 1 servings:

  • 500 g asparagus
  • Salt
  • Sugar or Stevia
  • 50 g butter
  • 3 tbsp, heaped capers

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 30 minutes

Low carb, quick and delicious

Peel the asparagus and trim off the woody ends. Bring water with salt and sugar (or Himalayan rock salt and stevia) to a boil, add the asparagus, and simmer gently for about 10 minutes. This will allow it to retain its bite. Melt the butter in another saucepan over medium heat and add the capers, frying them lightly. Drain the cooked asparagus well and add it to the caper butter, cut into pieces or whole, as desired. Let it simmer for another 2-3 minutes over medium heat, then enjoy. This is enough of a complete meal for me, but I can imagine this asparagus variation also working well as a side dish.
