Asparagus with pork fillet, baked

Ingredients for 2 servings:

  • 500 g asparagus, peeled and cut into pieces
  • 250 g pork fillet(s), approx.
  • 2 tbsp butter, maybe a little more
  • 2 tbsp flour, approx.
  • 1 pinch(s) of sugar
  • salt and pepper
  • 150 ml cream, approx.
  • 1 ball of mozzarella, sliced

Instructions

Working time approx. 40 minutes; Cooking/baking time approx. 25 minutes; Total time approx. 1 hour 5 minutes

to prepare well

Bring water to a boil, add salt and a pinch of sugar, and cook the asparagus until al dente. Remove the asparagus and drain well in a sieve. Cut the pork fillet into thick slices, flatten them slightly, and season with salt and pepper. Heat 2-3 tablespoons of butter in a pan, sear the meat on both sides, browning it lightly, and then remove it from the pan. Stir the flour into the butter with a whisk and brown it slightly. Deglaze with 1 ladle of asparagus water, stir in the cream, and reduce it slightly, season with salt and pepper. Place the asparagus in a baking dish, arrange the meat pieces on top, pour over the sauce, and scatter the mozzarella on top. Bake in a preheated oven at 200°C for about 25 minutes, until the cheese has melted and browned. Serve with white bread, rice, or pasta.
