Ingredients for 1 servings:

  • 125 g butter
  • 110 g sugar
  • 1 egg(s)
  • 150 g wheat flour type 405
  • ½ tsp baking powder
  • 80 g sultanas
  • 130 g chocolate chips or chopped dark chocolate
  • 45 g oat flakes, wholegrain
  • 80 g cornflakes

Instructions

Working time approx. 25 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 40 minutes

Preheat the oven to 180°C (top/bottom heat). Line two baking sheets with baking paper. Cream the butter and sugar in a mixing bowl until light and fluffy. Add the egg and mix well. Finally, add the flour and baking powder and mix well. Mix the sultanas, chocolate chips, oats, and half of the cornflakes into the batter. Place the remaining cornflakes in a bowl and crush lightly. Shape 1 tablespoon of the batter into a ball, then roll in the crushed cornflakes until lightly coated. Place on the baking sheets and flatten slightly. Bake for approximately 15 minutes, or until golden brown, rotating the tray halfway through. Makes approximately 24. Adapted from a recipe from the Australian supermarket chain Coles.
