Austrian fruit cake from the tray

Ingredients for 12 servings:

  • 1 ½ kg fruit (e.g. apples, plums, apricots, currants)
  • 6 eggs
  • 250 g sugar
  • 1 packet of vanilla sugar
  • 150 g butter
  • 300 g flour
  • 1 packet of baking powder
  • 6 tbsp sweet cream, liquid

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

Peel the apples and cut them into approximately 0.5 cm thick slices. Pit the plums and apricots, and halve them. Melt the butter in a saucepan and let it cool. Sift the flour and mix it with the baking powder. Beat the eggs, sugar, and vanilla sugar until fluffy. Gradually add the cooled, still-melted butter to the egg mixture, a spoonful at a time. Continue stirring and gradually add the flour and baking powder mixture. Finally, stir in the cream. Grease a baking sheet or line it with baking paper and spread the batter until the baking sheet is half full. Place the fruit on the batter (for apples or plums, leave some space between the pieces so the batter can “curve” nicely over the fruit). Sprinkle the apricots with flaked almonds, if desired, and sprinkle the apples and plums with cinnamon. Bake at 180 °C (convection oven) for about 30-40 minutes until golden brown.
