Austrian sausage salad

Ingredients for 4 servings:

  • 600 g meat sausage (Lyoner)
  • 200 g red bell pepper(s)
  • 100 g onion(s)
  • 50 g gherkins
  • 4 tbsp water, cold
  • 3 tbsp vinegar (wine vinegar, 5% acid)
  • 5 tbsp oil (sunflower oil)
  • Salt
  • Black pepper, coarsely ground
  • 2 tbsp chives, rolled

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

Skin the sausage, then first cut into slices about 0.5 cm thick, then cut these crosswise into strips 0.5 cm thick. Wash the bell peppers, quarter them, remove the seeds and membranes, and finely dice the flesh. Peel the onions and slice them into thin rings. Finely dice the gherkin. Place all ingredients in a large bowl. For the sauce, mix the water with the vinegar and salt in a small bowl until the salt has dissolved. Stir in the pepper and oil. Pour the sauce over the sausage salad, mix well, and let it marinate in the refrigerator for about 15 minutes. Arrange the sausage salad on plates, sprinkle with chives, and serve.
